クーQOO macarons!

QOO has to be my most favourite character of all time. I fell in love with the drinks in Singapore many years ago. The orange flavored drink was my love for a long time. However, you are not able to find it in Singapore anymore. The only flavor available in Singapore is white grape.

A friend came back from Japan with this can of juice for me. I was leaping in joy. Such simple joy in life. That also gave me the inspiration to make the following Qoo macarons!

As always, I worked on the filling first.

Ingredients :
115g Semi sweet chocolate chips
56g Unsalted Butter
1/4 Cup Icing Sugar

Directions:
Melt both chocolate and butter over simmering water. Remove from the heat once both are melted and stir vigorously to ensure proper incorporation. Sift in the icing sugar thereafter and stir until well combine. Leave it to chill in the fridge before using.

The macarons

Ingredients:
The biscuits
43g of egg whites
50g Granulated Fine Sugar
50g Icing Sugar
60g Almond Flour

Sky blue colouring
Orange colouring

Directions:

Double sift the flour and icing sugar together and set aside. Whip up the egg whites till foamy before adding the sugar gradually. Whip it up till stiff peaks. Fold in the sifted flour and icing sugar until ribbony stage.

I took out a small teaspoon of batter and set aside. Drop a tiny amount of orange colouring and mix it well. Place it into a v small piping bag.

Next, add sky blue colouring into the remaining batter and pipe 5 cm diameter circles onto the parchment papers. For the little horns, I change the piping tip to an even small circle one and pipe it. Next, I pipe the orange batter onto the face to create the orange cheek features.

Next, let this macarons dry out in an oven which has been preheated earlier at 200 degree. Remember to off the oven before placing the macarons inside. Leave the oven slightly ajar. After 8 minutes, bake the macarons at a temperature of 150 degree for 5 minutes until you see the feets.

After which, lower the temperature further to 120 degree and bake for another 17 minutes. Let it cool down slightly before removing the macarons. Then leave to cool down completely.

Assembly, pipe the chocolate frosting onto the macarons and sandwich with another piece. Leave it to set in the fridge and enjoy.🙂
